The underwater winery and the aging of wines beneath the waves is now a growing (although niche) market. The placing of bottles under the sea for between 1-2 years has delivered a preferable taste to most connoisseurs after comparisons with wines stored in a cellar.
The underwater conditions of total darkness and constant temperature, are thought to accelerate the ageing process and add complexity to the wine.
